For the past three weeks, I have been carefully monitoring the progress of my Aerogarden. After a few days under their protective domes, most of the pods sprouted, with the genovese basil and the lemon basil sprouting the fastest.

Once all the ingredients are prepped the dish doesn’t take long to prepare. Start off by heating the oil in a large saucepan over medium heat to cook the shallots and curry paste. After 2 minutes, add the coconut milk and the fish sauce and bring to a boil. Add the chicken and bell pepper and stir until the chicken is just cooked through. Finally stir in the chopped basil and lime juice and season to taste with salt and pepper. Garnish with more basil and some lime wedges. Serve with hot steamed rice.

The original recipe just called for basil, but I think the lemon basil worked out fine. Has anyone made anything good using lemon basil?
